Rainbow Salad

Ingredients (Serves 4):

  • 4 cups Kale

  • 1/3rd cup Boiled Black Beans

  • 1/2 chopped Medium Red Bell Pepper

  • 1/2 chopped Medium Yellow Bell Pepper

  • 10 Cherry Tomatoes

  • 1 chopped Cucumber

  • 5 Raw White Mushrooms

  • 1 chopped Green Onion

  • 1/2 Avocado

Sauce:

  • 1 tbsp Mustard

  • 1 tsp White Vinegar

  • 1 tsp Olive Oil

  • 1.5 tbsp Lemon Juice

  • 1 tsp Salt

  • 1/2 tsp Garlic Powder

    Instructions:

  • Add all the chopped veggies and beans in a bowl.

  • Add all the sauce ingredients into a cup and stir to mix.

  • Add the sauce to the veggies and keep mixing!

This salad could be served as a side with some protein (grilled chicken/meat or fish!)
