Beetroot Spinach Salad

Simple, fresh and delicious!

Ingredients (3 Servings):

  • 5 cups chopped Spinach

  • 20 chopped Cherry Tomatoes

  • 3 boiled Beets

  • 1/2 chopped Green Onion

  • 1 tbsp Pumpkin Seeds

Sauce:

  • 1 tbsp Balsamic Vinegar

  • 1 tsp Olive Oil

  • 1 tbsp Lemon Juice

  • 1 tsp Salt

  • 1/2 tsp Garlic Powder

Instructions:

  • Add all the chopped veggies in a bowl.

  • Add all the sauce ingredients into a cup and stir to mix.

  • Add the sauce to the veggies and keep mixing!

This salad could be served as a side with some protein (grilled chicken/meat or fish!)
