Whole Wheat Cinnamon Chia Loaf

Ingredients (Makes 11 Slices/560g):

  • 1/4th cup Chia Seeds

  • 240ml Water

  • 300g Whole Wheat Flour

  • 12g Baking Powder

  • 1.5 tsp Salt

  • 160ml Water

  • 60ml Vegetable Oil (any liquid oil)

  • 1 tbsp Cinnamon Powder

  • 3 tbsp Pumpkin Seeds for topping (optional)

Instructions:

  1. In a small bowl, combine the chia seeds with 240ml water and whisk. Leave aside for 10 minutes to form a jelly like texture.

  2. Combine all the other ingredients (except for the pumpkin seeds) and the jell like chia seeds in a bowl and mix until well combined (don’t over mix).

  3. Set aside for 10 minutes.

  4. In the meantime, pre-heat your oven (180°C).

  5. Grease (spray oil) your baking pan, then add the dough into the pan. Sprinkle the pumpkin seeds (optional) on top and place in the oven!

  6. Bake for 70 minutes until toothpick comes out clean. Once the loaf is well baked, leave to cool for 10 minutes.

  7. Serve with any nut butter, cream cheese, or any spread of your choice!
