Whole Wheat Veggie Pizza
Cheese Free Whole Wheat Veggie Pizza!
Ingredients (Serves 4):
Pizza Dough:
3 cups Whole Wheat Flour
1 tbsp Olive Oil
2 tsp Instant Yeast
1 1/2 cup Water
Dash of Salt
Toppings:
500g Strained Tomatoes
10 Garlic Cloves (Chopped)
1/2 medium Onion (chopped)
1 Medium Eggplant (chopped)
2 Medium Carrots (chopped)
1 Yellow Bell Pepper (chopped)
1 cup Cauliflower (chopped)
5 Medium Zucchini (chopped)
Instructions:
In the bowl of a stand mixer, combine the water and yeast. Allow the mixture to sit for a few minutes. *If you don’t have a stand mixer, you can just mix well with a spoon, or use your hands!
Add in the olive oil, flour and the salt.
Lightly grease a large bowl, then scrape the dough into the bowl.
Turn the dough to coat it in oil and cover the bowl with cling film.
Let the dough rise at room temperature until doubled, about 1 hour.
In the meantime, pre-heat the oven to 180°C
Spray oil a pan, and add the chopped veggies (garlic, onion, eggplant, carrots, bell pepper, cauliflower zucchini).
Bake the veggies in the oven for about 15-20 minutes.
In the meantime, cut the dough into 2 equal portions and roll out into desired shape (this recipe made 2 medium sized pans).
Once the veggies are ready, prepare your pizza with the toppings.
Spread the strained tomatoes on the dough, and add the vegetable toppings.
Bake until the crust is golden, 8-10 minutes!
