Rainbow Salad
Ingredients (Serves 4):
4 cups Kale
1/3rd cup Boiled Black Beans
1/2 chopped Medium Red Bell Pepper
1/2 chopped Medium Yellow Bell Pepper
10 Cherry Tomatoes
1 chopped Cucumber
5 Raw White Mushrooms
1 chopped Green Onion
1/2 Avocado
Sauce:
1 tbsp Mustard
1 tsp White Vinegar
1 tsp Olive Oil
1.5 tbsp Lemon Juice
1 tsp Salt
1/2 tsp Garlic Powder
Instructions:
Add all the chopped veggies and beans in a bowl.
Add all the sauce ingredients into a cup and stir to mix.
Add the sauce to the veggies and keep mixing!
This salad could be served as a side with some protein (grilled chicken/meat or fish!)
