Prep Time: 10 Minutes

Cook Time: 24 Minutes

Instructions

  • In order to make this recipe, soak the chickpeas and fava beans with water in a bowl overnight.

  • Wash the chickpeas and fava beans, and drain using a sieve.

  • Preheat oven to 200°C. Spray a baking sheet with spray oil.

  • Chop the onions and garlic cloves, and place in a food processor. Pulse for 30s to 45s.

  • Add the chickpeas, fava beans, dried coriander, salt, cumin, pepper and cinnamon in the food processor and pulse until combined.

  • You don't want to over-process the mixture, or you will end up with hummus texture.

  • Stir in the baking soda and water, and at this point your mixture should be holding together. The water is only necessary if your mixture is too dry.

  • Scoop spoonfuls of mixture out and form into small patties; you should get about 40, but this depends on the size of your patty.

  • Place on prepped baking sheet.

  • Bake for 10-12 minutes, flip patties and bake for another 10-12 minutes or until falafel are golden and cooked through.
