Beetroot Spinach Salad
Simple, fresh and delicious!
Ingredients (3 Servings):
5 cups chopped Spinach
20 chopped Cherry Tomatoes
3 boiled Beets
1/2 chopped Green Onion
1 tbsp Pumpkin Seeds
Sauce:
1 tbsp Balsamic Vinegar
1 tsp Olive Oil
1 tbsp Lemon Juice
1 tsp Salt
1/2 tsp Garlic Powder
Instructions:
Add all the chopped veggies in a bowl.
Add all the sauce ingredients into a cup and stir to mix.
Add the sauce to the veggies and keep mixing!
This salad could be served as a side with some protein (grilled chicken/meat or fish!)
